The first b-side I remember running into the ground was Redman's Blow Ya Mind remix. I was amped about new Hit Squad material as a teen and had the maxi-cassette single on deck. Hit Squad in general was great at giving us dope b-sides back in the '91-93 era just before they broke up, Letterman Pete Rock remix, Hard Like A Criminal by Das Efx, etc.
I remember in the late 90's making trips to Fat Beats for a gang of D.I.T.C. 12"s with great b-sides, I'll never get tired of hearing songs like "Do Your Thing" with Diamond D & Lord Finesse and "Yes You May" remix feat. Big L.
For more recent b-sides, I usually check for anything out of the Soundsci camp, also Vursatyl gave us the remix single of Bring It To A Halt. Slice of Spice has been killing it with b-sides in recent years too.

right now, i'm listening to an old g rap mix i did back in the days ... "rhyme tyme" is one of my all-time faves when it comes to b sides
