Drum programing. If it's a sample with a break, i'd say it's pretty much timeless. Whether or not it ages poorly is really on the listener though. I listen to tapped out drums from 92 and they still sound fresh to me.

At what point are tapped out drum patterns the norm? '92 going into '93?
If so, I would say that the good beats from 'about '89-91 that were entirely break driven still sound fresh to me (although oftentimes the rapping is still on some '87 staccato steez), hell some of them still sound ahead of their time, whereas a whole lot of beats in the '92-'96 era sound painfully trapped in their time.

Yeah, I'd say the early 90's where when the tapped out drum phase took off. Pete rock and post main source Extra p really changed the game with that shit. The break era (which I'd say was "started" by Stezo and the Jungle brothers) was definitely a timeless era for beats. Also, cause they were the first ones unearthing a lot of the samples that became "standards" a few years later.
That said, i remember hearing "Jeep ass nigga" for the first time and losing my shit over the drums. Same with anything "Low end Theory". That was some really ill break chopping that not a lot of people were doing then. And, to me, all that shit sounds great still.
Ah ok, so there really aren't "definite" eras then, as there seems to be a ton of overlap, as well as numerous instances of mixed or intermediate methods.
I doubt I'll ever get t the point where I'm sweating the beatmaking technique. Shit either sounds good or bad to me and if I haven't gone through a "grown man music" metamorphosis a la Ithe, I guess I never will. I'm real low brow when it comes to production.

87-early 91- mostly breaks
91-94-tapped beat made to sounds like breaks OR the heavy snare reverb tapped drums (Pete rocks specialty)
95-98- tapped drums that sounded more synthetic (this excludes a lot of underground east coast shit cause that genre pretty much stayed in the early/mid 90s mold for ever)
98-2004-tapped drums that were not exactly synthetic but also didn't sound like breaks. Think of the Primo drums that dominated the music back then.
2004-the timbaland/neptunes style drums that bumped but we're more synthetic than anything ever before it.
Obviously, these dates could be not exact as this was completely off the cuff, but I think that's the basic way I saw it. A lot of these era's bleed into each other but i'm just pointing out when certain styles were popularized.
