Real easy.

Open iTunes
Click Edit, then Preferences
Under the General tab click on Import Settings
Import Using: MP3 Encoder
Setting: Custom
When you select Custom a new window will open where you select 320 kbps under Stereo Bit Rate.
I have Variable Bit Rate Encoding checked, but I honestly don't know what difference that makes. I also have Quality set at Highest.
Sample Rate and Channels are both at Auto and Stereo Mode is set to Joint.
OK everything and you're set.
Pop in a CD and start importing.
